How to make Egyptian golden 'Lentil Soup'

CAIRO – 24 December 2018: A beloved traditional soup that is usually consumed in winter times in Egypt. It is deemend one of the simplest and most enjoyable way to eat lentils is by serving it “golden Egyptian Lentil Soup” style.



Ingredients


*The following ingredients can serve up two four people:


- 3 cups water
- 1 cup red lentils
- 1 roma tomato, quartered
- 1 carrot, quartered
- 2 small onions, quartered
- 1 potato, quartered (Optional)
- 4 cloves garlic, peeled and quartered
- 1/4 cube chicken bouillon
- 1 cup water
- 2 teaspoons ground cumin
- 1/2 teaspoon sea salt
- 1/2 teaspoon cracked black pepper
- 1/4 teaspoon ground coriander

Recipe


- Place 3 cups water, lentils, tomato, carrot, onion, garlic, and chicken bouillon in a stockpot over medium heat; cook until vegetables and lentils are softened, 20 to 25 minutes. Remove from heat and cool to lukewarm.


-Blend vegetable and lentil mixture with an immersion blender until smooth (or until it reaches your preferred texture).


*You can puree the soup, in batches, in a blender OR you can use an immersion blender and blend to desired texture.


- Stir 1 cup water, cumin, sea salt, pepper, and coriander into soup; heat over medium heat until warmed.


*Optional: Add in lemon juice to add an extra taste, and try eating your dish with some side fresh onions.
