Mixing up typical Christmas recipes and adding a holiday touch to others, Egypt Today contributor and founder of Happy Tummy catering service Rouane El-Mahdy helped us put together a full menu for a unique Christmas dinner.
Christmas punch
Start the evening with this quick and easy punch inspired by the traditional German holiday drink Kinderpunsch. This one is warm, delicious and perfect for a cozy family gathering before, or even after, the big meal.
Ingredients: 125 ml apple juice, 65 ml grape juice, 1 tsp clove, 2 tsp cinnamon, 1 cup sugar, water.
Preperations: heat the mix on the stove and let it boil. Strain and serve.
Quinoa Pomegranate Christmas Salad
Add a healthy and colorful addition to your holiday table with this healthy salad. Gluten-free, vegan and highly nutritious, this dish will add color and a lively spirit to your special meal.
Ingredients: 1/2 cup quinoa, Pomegranate seeds, Green beans, cut into halves, Balsamic grape vinegar, 1 lemon, Salt, Pepper, Shredded almonds.
Dressing ingredients: balsamic grape vinegar, Salt, One lemon.
Preperations:
1. Cook the quinoa and let it cool for a few minutes.
2. Blanch green beans in a large pot of water until tender. Place beans in a pan, season generously with salt and pepper. Drizzle vegetable oil over the beans and stir-fry until slightly crispy.
3. Roast the almonds.
4. In a bowl, toss the quinoa, pomegranate seeds and green beans.
5. Sprinkle almonds on top and enjoy a healthy holiday plate.
